Fire Glazed Candy Carrots

These deliciously sweet, fire glazed carrots are quick to prepare and absolutely addicting! My family ends up elbowing each other to get to the slightly charred carrots that tend to stick to the bottom of the cast iron. It's also an added bonus that these carrots are a hit with the kids!
  • 1 large bag of baby carrots
  • ½ cup of olive oil
  • ½ cup of honey
  • ½ cup of dark brown sugar
  1. Fire up the Sherman Cooker to get a hot bed of coals established and a hot fire burning.
  2. Rinse baby carrots & cut them in half lengthwise.
  3. Put carrots into a cast iron dutch oven or skillet.
  4. Add olive oil, honey, brown sugar and mix.
  5. Cover the cast iron dutch oven or skillet to steam the carrots and bring liquid to a boil until the carrots soften.
  6. Once the carrots are soft, remove the cover. The carrots will begin to charr and the liquid will reduce to a sticky glaze.
  7. Once charred to your liking, dig in!
