Smokey Street Corn

3 large bags of frozen corn

4 tbsp butter
- Sprinkle of salt & pepper

3 tbsp olive oil

4 tbsp sour cream
-
4 tbsp mayonnaise

2 tbsp fresh lime juice

3 tbsp grated Cotija cheese

2 tbsp fresh cilantro
-
1 tbsp chili powder
- Fire up the Sherman Cooker to get a hot bed of coals established and a hot fire burning.
- Pour the bags of frozen corn into a cast iron skillet
- Place cast iron on OSC Cooking Grate and cook until butter melts and corn begin to brown
- In a bowl, mix together all sauce ingredients
- Once the corn is cooked and slightly browned, stir in the sauce and allow it to warm
- Once the sauce is warmed, remove the cast iron from the fire and dig in!
